Pumpkin Custard...


Doesn't that look good?  Believe me...it is!  I wanted to share the recipe with you!  This recipe is a basic, simple version I found last year on the Coastal Living website...but a little addition I made takes it over the top!


Pumpkin Custard with...Caramel Whipped Cream 
{yes, that is the little addition that makes this so good...}

Ingredients:

1 (15 ounce) can pumpkin puree (not pumpkin pie mix)

1 cup heavy whipping cream

1 (14 ounce) can sweetened condensed milk

5 large eggs (I used a cup of egg beaters)

2 teaspoons ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon allspice

1/4 teaspoon salt

1 teaspoon vanilla extract

Preparation :

1. Combine all ingredients in a blender (or mix on a bowl, the blender just makes it easier to pour).  Pour evenly into lightly greased custard cups, and place in a roasting pan.  Add hot water to the pan, to a depth of 1 inch.

2. Bake at 350 degrees for 30-40 minutes until custard is set. (I found it was around 30 minutes in the glass custard cups, and closer to 40 minutes in the white ceramic ramekins.)  Transfer custard cups to a wire rack to cool completely.  Refrigerate until ready to serve.



3.  Now the really good part...I whipped more heavy cream for a topping, adding a little sugar and a teaspoon of vanilla.  But I also added caramel syrup ( I used Hershey's, but you can use whatever you like)- the syrup pours easier than a caramel topping.  Just add, to taste (I added some as I whipped the cream, and more afterwards)...until it has a nice caramel flavor!  Before serving, spoon, or pipe the whipped cream onto the custard and drizzle with a little more caramel syrup.


This is so good...creamy custard, and caramel goodness!  I made this last year for Thanksgiving...everyone liked it better than regular pumpkin pie and have already requested it for this year's gathering! 
  
And any leftover caramel whipped cream is OH. SO. GOOD. on top of a cup of coffee, too...just sayin'


Are you all ready for Halloween?  We don't do too much around here, but I found this crazy guy at the thrift store, and he decided to take up residence on one of my old scales.  He is from 1987, a collectible foam pumpkin from Hollywood makeup artist Todd Masters...there were several different styles made.
